Miso love

In light of the recent article concerning the small percentage of cells in our body that are actually human – and 57% being made up of microscopic organisms let’s consider gut health. Or maybe we could say bacterial health.

Looking at beneficial foods we can consider Miso, fermented soybean paste that is made into a delicious broth combined with tofu, seaweed, scallions, and whatever other additions you’d like. It’s incredibly easy to make and according to Michael Tierra “Miso is one of the most perfect foods. First because…is is rich in easily assimilated high-quality protein. Second, it is commonly taken before or during Japanese meals because it aids the assimilation of other foods. This is because unpasteurised miso contains natural digestive enzymes, lactic acid bacteria (lactobacillus), salt resistant yeasts, and healthful organisms found in the ingredients used to make miso.” Miso can also be used to relieve the symptoms of acid indigestion, aid digestion and relieve symptoms of a hangover.

Even better is to add in some Shiitake mushrooms. In China, mushrooms are considered “spirit medicine”, believed to nourish the heart or spirit. We now know as well that “recent research has substantiated the immense therapeutic properties of shiitake: anti-tumor, immune-regulated, anti-viral, anti-bacterial, anti-parasitc, and anti-cholesterol.”
